Breakfast by dear Hubby.. !!

Yes you did read it right.. Today my hubby prepared breakfast for me.. 🙂

He is not a cook.. he hardly cooks actually..  Even for a cup of tea he does not get ready.. But today, to my surprise he himself said I will prepare breakfast for you.. and how can I say No to such a tempting offer.. 🙂

So he prepared Egg Bhurji Pav and tea for breakfast..

It was really delicious.. I simply loved it.. 🙂

While eating I got to know a fact as well… He said guys cook only when they are in a mood to cook, and if you force them to cook then you will get some bad tasting stuff or nothing at all… God I just wish, Saurabh has his cooking mood swings more often and not once a year or so.. 🙂

Almond Brownie

Browsing through the internet.. and I came across this brownie that you just cannot ignore.. I just got hooked to it, wanted a bite then and there.. But how can I take a bite from the picture.. so my craving for the brownie reached a level where I finally baked these brownies at 9:00 pm.. They were truly worth the effort.. and my husband actually served them to people saying he has baked them.. 🙂

Preparation Time:- 20 mins |  Cooking Time:– 25 mins |  Serves:- Around 12 brownies

INGREDIENTS:

  • 8 table spoon butter (unsalted & melted)
  • 1 cup Sugar
  • 2 Eggs
  • 1 tea spoon Vanilla essence
  • 1/2 cup Cocoa powder
  • 1/4 cup All purpose flour (Maida)
  • A pinch of Salt
  • 2 tea spoon instant coffee powder
  • 1/2 – 3/4 cup  chopped or sliced almonds
  • 1/2 cup chocolate chips or chocolate chopped
  • 1/4 tea spoon cinnamon powder (Dal Chini Powder)

PREPARATION:

In a small bowl, mix the flour, cinnamon powder, salt, coffee powder with a fork.

Take a big mixing bowl, and mix the butter and cocoa powder.

To this, add the eggs, one by one, mixing them well into the mixture. No need to beat and incorporate air into this. Mix in the sugar.

Add the vanilla essence.

Now, add the flour-cinnamon-salt-coffee mix to this and stir well for 2 minutes in round motion in a single direction.

Now fold the chopped almonds and chocolate chips to this batter.

Pour the batter in a butter paper lined tin.

Bake in a pre-heated oven at 160 degrees C for 25 min.

Allow it to cool down on the wire rack for about half an hour. Do not remove from the baking tin.

Once cooled down, remove from tin and chop into equal pieces, and allow them to settle in a tray for a couple of hours.

SERVING:

  • Serve with hot chocolate sauce or cool vanilla scoop.

Simple Rich Chocolate Cake

I had promised to get a cake at office for Christmas.. What better than a rich chocolate cake.. 🙂 So last night I could finally manage to bake one.. Today when I got it to office… it was gone within minutes.. Everybody simply loved it.. 🙂

I really enjoyed watching the enjoy the cake so much.. 🙂 I have no words for this feeling.. 

Rich Chocolate Cake

Preparation Time:- 15 mins |  Cooking Time:– 30-35 mins |  Serves:- 1 cake around 10-12 pieces

INGREDIENTS:

  • 1/2 cup Vegetble Oil
  • 2 cup Sugar
  • 2 Eggs
  • 1 tea spoon Vanilla essence
  • 3/4 cup Cocoa powder
  • 1 3/4 cup All purpose flour (Maida)
  • 1/2 tea spoon Salt
  • 1 1/2 tea spoon Baking powder
  • 1 1/2 tea spoon Baking Soda
  • 1 cup Milk
  • 1 cup Boiling Water

PREPARATION:

Take a big mixing bowl, and stir the flour, cocoa, baking powder, baking soda, sugar and salt together.

Now add the eggs, milk, vanilla essence and oil. Whisk properly. No lumps should be there.

Add the boiling water and mix. The batter will become thin.

Pour the batter in a butter paper lined cake tin. (You will need a large tin)

Bake in a pre-heated oven at 180 degrees C for 30-35 min.

Insert a skewer in the center to check. If the skewer comes out clean, then remove the cake else bake for a few more mins.

Allow the cake to cool on a wired rack for about 10 mins.

SERVING:

  • Serve hot with hot chocolate sauce or cool vanilla scoop.

4 in 1 – Mixed Veg

If  you have some veggies at home which cannot fulfill one entire meal.. Don’t worry.. mix them all up.. So that you get a nice dish.. and all your veggies gets utilized.. This is a very simple mixed veggie.. You can add in any vegetable here.. I had 4 in my kitchen so named it 4 in 1..

Preparation Time:- 5 mins |  Cooking Time:– 20-25 mins |  Serves:- 2-3 people

INGREDIENTS:

  • 1 cup Cauliflower (Phool Gobhi) chopped as small florets
  • 1 cup Potatoes (Aaloo) chopped in small cubes
  • 1 cup Carrot (Gajar) chopped in small cubes
  • 1 cup Peas (Matar)
  • 1 table spoon Mustard oil (Sarson ka tel)
  • salt to taste
  • 1/2 tea spoon Turmeric powder (Haldi Powder)
  • 1/4 tea spoon red chilli powder (Lal Mirch powder)
  • 1 tea spoon Cumin seeds (Jeera)
  • 1 tea spoon garam masala
  • 1 tea spoon Dry Mango powder (Amchoor Powder)

PREPARATION:

Heat the mustard oil  in a pan and add cumin seeds. Allow them to crackle.

Add the chilly powder, salt and turmeric powder to the oil. Now add the chopped vegetables and mix gently so that everything gets folded in the masala properly.

Simmer the stove and add 1/2 cup of water. Mix again and cover the lid.

Allow the vegetables to cook in steam for about 15-20  minutes, by mixing in between. Once the water dries out and the veggies gets soft sprinkle the garam masala and dry mango powder. Mix well.

SERVING:
  • Mix Veg goes well with hot chapatis/paranthas and curd.
  • Try to add a bit ghee before serving, it will change the taste of the dish.

I am one of the blogger who is taking part in observing silence for the innocent victims who lost their lives on Friday’s shooting rampage at Connecticut.  Like you we cried as the news reports come in. As a mother of two, it is really hard for me to imagine about how somebody can hurt those innocent 6 and 7 years old. Who supposed to be laughing at their Christmas gifts wrapped under the Christmas tree and long waited holidays? In the time of happiness we are mourning for the loss of these tiny angels.
Their life was cut short, their dreams were crushed. Those late night kisses and wonderful smiles when you pick them and light sadness when you drop them in the school is going to be missed forever to that little angel’s parents. Also to those moms…
