Chocolate Chip Cup Cakes

When you have neighbors boxes to return, and the neighbors have two cutie pie kids.. then these cup cakes have to go in the boxes when returned.. The kids loved them and want me to bake them yet again.. ūüôā

Preparation Time:-¬†20 mins |¬† Cooking Time:–¬†20 mins |¬† Serves:-¬†Around 6 cup cakes

INGREDIENTS:

  • 1 and 3/4 cup All purpose flour (Maida)
  • 1/3 cup vegetable oil
  • 3/4 cup Sugar
  • 1 Egg
  • 1 tea spoon¬†Vanilla essence
  • 3/4 cup Chocolate chips + 1/4 cup for sprinkling
  • 2 tea spoon Baking powder
  • 1/2 tea spoon Baking Soda
  • 2 table spoon Cocoa powder
  • 1 cup Milk

PREPARATION:

Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl.

Mix the dry and wet ingredients together, remembering that a lumpy batter makes the best muffins.

Line the cup cake tin with paper. Divide the batter evenly among the papered tins. Sprinkle some chocolate chips on each cup cake.

Bake in a pre-heated oven at 180 degrees C for 20-25 min.

Insert a tooth pick  in the center to check, it should come out clean.

Cool the cup cakes on the wired rack for about 5-10 mins.

SERVING:

  • Decorate with chocolate chips or sprinkles.

Banana Muffins

We had been invited for a birthday party of our sweet little neighborhood girl, Suku.. (sorry Arushi.. ūüôā ). Just the previous day I came to know that two of these kids actually checked my blog and loved it.. ūüôā I truly have no words to express myself, it was one of the happiest moments I have had.. So for the birthday girl and the other kids, Snehith and Sanskaar I decided to make some muffins.. I just hope you guys liked them as well.. Love you kids.. ūüôā

  • 1 and 1/4 cup All purpose flour (Maida)
  • 1/2 cup butter (unsalted & metled)
  • 1 cup Sugar
  • 2 Eggs
  • 1/2 tea spoon Baking Soda
  • 3 bananas riped and mashed

PREPARATION:

In a large bowl, beat the butter and sugar until creamy.

Add the eggs and beat till fluffy

Stir in the mashed bananas and mix properly.

Add the flour and baking soda, fold them in the batter.

Line the cup cake tin with paper. Divide the batter evenly among the papered tins.

Bake in a pre-heated oven at 180 degrees C for 25-30 min.

Insert a tooth pick  in the center to check, it should come out clean.

Cool the cup cakes on the wired rack for about 5-10 mins.

SERVING:

  • Serve with any frosting as topping.
  • Decorate with chocolate chips or sprinkles.

Fastest Fudge Cake

I had this cake bookmarked since a long long time.. Just did not get time to try it out.. Its had been really long that I baked something.. so again when I came across this recipe I just had to bake it.. This is a heavenly cake.. Ohh really really awesome..

Fudge Cake

Preparation Time:-¬†15 mins |¬† Cooking Time:–¬†30-35 mins |¬† Serves:-¬†1 cake around 10 small pieces

INGREDIENTS:

  • 1/2 cup Unsalted Butter Melted
  • 1 and 1/4 ¬†cup Brown Sugar
  • 2 Eggs
  • 1 tea spoon¬†Vanilla essence
  • 1/4 cup¬†Cocoa¬†powder
  • 1 cup All purpose flour (Maida)
  • 1/4 tea spoon Salt
  • 1/2 tea spoon Baking Soda
  • 1/2 cup Boiling Water

PREPARATION:

In a small bowl, whisk the flour, cocoa powder, baking soda, and salt. Sift only if the cocoa remains lumpy after whisking.

In a large bowl, combine the melted butter and brown sugar with a wooden spoon or rubber spatula.

Add the eggs and vanilla; stir until well blended.

Add the flour mixture all at once and stir just until all the flour is moistened.

Pour the hot water over the batter; stir just until it’s incorporated and the batter is smooth.

Pour the batter in a butter paper lined cake tin.

Bake in a pre-heated oven at 180 degrees C for 30-35 min.

Insert a skewer in the center to check. If the skewer comes out clean, then remove the cake else bake for a few more mins.

Allow the cake to cool on a wired rack for about 10 mins.

Served

SERVING:

  • You can add any icing to this cake, like ganache.
  • Serve hot with hot chocolate sauce or cool vanilla scoop.

Aaloo Kulcha

This post is a part of the Stuffed Breads theme at BM#24 hosted by Srivalli.

Last time I had tried Onion stuffed Kulcha, due to the¬†unavailability¬†of resources.. But this time I filled up a nice tangy potato stuffing in my Kulchas.. They came out really well.. My husband was like that they have swollen up like puris… ūüôā

Preparation Time:- 1 hr 10 mins |  Cooking Time:Р7 mins per kulcha|  Serves:- 6-7 kulchas

INGREDIENTS:

For Dough:

  • 2 cups All Purpose Flour (Maida)
  • 1/2 tea spoon Salt
  • 1 table spoon Yogurt (Dahi)
  • 1/4 tea spoon¬†Soda bicarbonate (Baking Soda)
  • 1 tea spoon Sugar
  • 1/2 cup Milk

For Stuffing:

  • 3 medium Potatoes boiles
  • 1/2 tea spoon Red Chilli Powder (Lal Mirch powder)
  • 1 tea spoon coriander powder (Dhaniya powder)
  • 1/2 table spoon Chaat masala
  • salt to taste
  • 1 tea spoon Garam Masala

For Garnishing:

  • Some Sesame seeds (White Til)
  • Some dried Mint leaves crushed (Sukha Pudina)

PREPARATION:

Take refined flour in a bowl. Add salt, yogurt, soda bicarbonate, sugar and milk and knead into a soft dough.

Cover with a damp cloth and rest for an hour.

Grate the potatoes and mix in the salt, chaat masala, coriander powder, garam masala and chilly powder, also the green chillies if using.

Mash it properly with hands. The stuffing is ready. Allow it to cool down completely.

Preheat oven to the 250 degrees for 10 mins.

Make pedas of the dough and rest for five minutes.

Roll each dough peda to a small puri, place a portion of the potato stuffing and seal it properly. Roll in into a ball again and allow it to settle for 4-5 mins.

Pat each ball into a round kulcha. Pat gently as the stuffing tend to come out easily. Roll the kulcha to make a small chapati.

Grease the baking tray with oil and place this kulcha on it. Sprinkle some sesame seeds and pudina powder on the surface.

Bake in the pre heated oven for 5-7 mins at 250 degrees. The first batch might take a bit longer.

Almond Brownie

Browsing through the internet.. and I came across this brownie that you just cannot ignore.. I just got hooked to it, wanted a bite then and there.. But how can I take a bite from the picture.. so my craving for the brownie reached a level where I finally baked these brownies at 9:00 pm.. They were truly worth the effort.. and my husband actually served them to people saying he has baked them.. ūüôā¬†

Preparation Time:-¬†20 mins |¬† Cooking Time:–¬†25 mins |¬† Serves:-¬†Around 12 brownies

INGREDIENTS:

  • 8 table spoon butter (unsalted & melted)
  • 1 cup Sugar
  • 2 Eggs
  • 1 tea spoon¬†Vanilla essence
  • 1/2 cup¬†Cocoa¬†powder
  • 1/4 cup All purpose flour (Maida)
  • A pinch of Salt
  • 2 tea spoon instant coffee powder
  • 1/2 – 3/4 cup ¬†chopped or sliced almonds
  • 1/2 cup chocolate chips or chocolate chopped
  • 1/4 tea spoon cinnamon powder (Dal Chini Powder)

PREPARATION:

In a small bowl, mix the flour, cinnamon powder, salt, coffee powder with a fork.

Take a big mixing bowl, and mix the butter and cocoa powder.

To this, add the eggs, one by one, mixing them well into the mixture. No need to beat and incorporate air into this. Mix in the sugar.

Add the vanilla essence.

Now, add the flour-cinnamon-salt-coffee mix to this and stir well for 2 minutes in round motion in a single direction.

Now fold the chopped almonds and chocolate chips to this batter.

Pour the batter in a butter paper lined tin.

Bake in a pre-heated oven at 160 degrees C for 25 min.

Allow it to cool down on the wire rack for about half an hour. Do not remove from the baking tin.

Once cooled down, remove from tin and chop into equal pieces, and allow them to settle in a tray for a couple of hours.

SERVING:

  • Serve with hot chocolate sauce or cool vanilla scoop.
