Gajar Ka Halwa

Winters arrive with the lovely red carrots, and time for some gajar ka halwa… My mom used to make this, and we used to just wait and wait, since the house used to fill up with the sweet aromas… I can’t say if my halwa comes out as tasty as hers but Saurabh says it is something to die for.. 🙂

Gajar ka halwa

Preparation Time:- 30 mins | Cooking Time:- 5-6 hrs | Serves:- 6-8 people

INGREDIENTS:

  • 1  kg Red Carrot grated (Gajar)
  • 2 ltr Milk
  • 1 Cup Sugar
  • 3-4 tablespoons of Ghee
  • Almonds and cashewnuts for Garnishing (Almonds soaked over night, peeled and chopped can be used)

PREPARATION:

In a pan add the Milk and carrots. Bring to boil by stirring continuously.

Simmer the stove and let the milk boil. Keep stirring in between. It will take around 4-5 hrs to cook properly.

Once there is very little milk left and the carrots seems to be boiled properly, add the sugar, and now stir continuously.

Once the milk has dried out, add the ghee and start frying the halwa. Continue the same for around half an hr, till the halwa gets cooked properly.

Garnish with Almonds and cashewnuts.

Almond Brownie

Browsing through the internet.. and I came across this brownie that you just cannot ignore.. I just got hooked to it, wanted a bite then and there.. But how can I take a bite from the picture.. so my craving for the brownie reached a level where I finally baked these brownies at 9:00 pm.. They were truly worth the effort.. and my husband actually served them to people saying he has baked them.. 🙂

Preparation Time:- 20 mins |  Cooking Time:– 25 mins |  Serves:- Around 12 brownies

INGREDIENTS:

  • 8 table spoon butter (unsalted & melted)
  • 1 cup Sugar
  • 2 Eggs
  • 1 tea spoon Vanilla essence
  • 1/2 cup Cocoa powder
  • 1/4 cup All purpose flour (Maida)
  • A pinch of Salt
  • 2 tea spoon instant coffee powder
  • 1/2 – 3/4 cup  chopped or sliced almonds
  • 1/2 cup chocolate chips or chocolate chopped
  • 1/4 tea spoon cinnamon powder (Dal Chini Powder)

PREPARATION:

In a small bowl, mix the flour, cinnamon powder, salt, coffee powder with a fork.

Take a big mixing bowl, and mix the butter and cocoa powder.

To this, add the eggs, one by one, mixing them well into the mixture. No need to beat and incorporate air into this. Mix in the sugar.

Add the vanilla essence.

Now, add the flour-cinnamon-salt-coffee mix to this and stir well for 2 minutes in round motion in a single direction.

Now fold the chopped almonds and chocolate chips to this batter.

Pour the batter in a butter paper lined tin.

Bake in a pre-heated oven at 160 degrees C for 25 min.

Allow it to cool down on the wire rack for about half an hour. Do not remove from the baking tin.

Once cooled down, remove from tin and chop into equal pieces, and allow them to settle in a tray for a couple of hours.

SERVING:

  • Serve with hot chocolate sauce or cool vanilla scoop.

Simple Rich Chocolate Cake

I had promised to get a cake at office for Christmas.. What better than a rich chocolate cake.. 🙂 So last night I could finally manage to bake one.. Today when I got it to office… it was gone within minutes.. Everybody simply loved it.. 🙂

I really enjoyed watching the enjoy the cake so much.. 🙂 I have no words for this feeling.. 

Rich Chocolate Cake

Preparation Time:- 15 mins |  Cooking Time:– 30-35 mins |  Serves:- 1 cake around 10-12 pieces

INGREDIENTS:

  • 1/2 cup Vegetble Oil
  • 2 cup Sugar
  • 2 Eggs
  • 1 tea spoon Vanilla essence
  • 3/4 cup Cocoa powder
  • 1 3/4 cup All purpose flour (Maida)
  • 1/2 tea spoon Salt
  • 1 1/2 tea spoon Baking powder
  • 1 1/2 tea spoon Baking Soda
  • 1 cup Milk
  • 1 cup Boiling Water

PREPARATION:

Take a big mixing bowl, and stir the flour, cocoa, baking powder, baking soda, sugar and salt together.

Now add the eggs, milk, vanilla essence and oil. Whisk properly. No lumps should be there.

Add the boiling water and mix. The batter will become thin.

Pour the batter in a butter paper lined cake tin. (You will need a large tin)

Bake in a pre-heated oven at 180 degrees C for 30-35 min.

Insert a skewer in the center to check. If the skewer comes out clean, then remove the cake else bake for a few more mins.

Allow the cake to cool on a wired rack for about 10 mins.

SERVING:

  • Serve hot with hot chocolate sauce or cool vanilla scoop.

Classic Cup Cakes

Have been doing some baking experiments lately.. but whatever I bake, Saurabh is like it can be better… I tried Chocolate cake.. cookies.. but he was not really satisfied.. So I decided on making the Classic Vanilla Cup Cakes… Saurabh took a bite.. I was sitting and staring at him, waiting to hear his response… He ate it completely and then said “I bet you will not be able to replicate them.”, which means they were perfect.. 🙂

Classic Cup Cakes

Preparation Time:- 20 mins |  Cooking Time:– 20 mins |  Serves:- Around 6 cup cakes

INGREDIENTS:

  • 1 and 1/2 cup All purpose flour (Maida)
  • 1/2 cup butter (unsalted & metled)
  • 3/4 cup Sugar
  • 2 Eggs
  • 1 tea spoon Vanilla essence
  • 1/2 tea spoon Salt
  • 1 and 1/2 tea spoon Baking powder
  • 1/2 cup Milk

PREPARATION:

Sift the flour, baking powder and salt and keep aside.

Take the milk and mix the vanilla essence in it. Keep aside.

Take a big mixing bowl, and beat butter and sugar till its light and fluffy.

Add eggs one at a time. Beating well for each egg.

Add half of the dry ingredients. Mix properly. Now add the milk with Vanilla Essence and the remaining dry ingredients.

Mix the batter properly.

Line the cup cake tin with paper. Divide the batter evenly among the papered tins.

Bake in a pre-heated oven at 180 degrees C for 20-25 min.

Insert a tooth pick  in the center to check, it should come out clean.

Cool the cup cakes on the wired rack for about 5-10 mins.

SERVING:

  • Serve with any frosting as topping.
  • Decorate with chocolate chips or sprinkles.

Adirasam

Adirasam.. when I first read the name I thought it might be some Rasam.. but to my surprise it was a sweet.. 🙂 Thanks to Divya’s SNC Event that I came across this recipe.. Also thanks to Yashodha for the fabulous recipe.

Adirasam

Preparation Time:- 1-2 hrs |  Cooking Time:– 15 mins |  Serves:- 10-15 pieces

INGREDIENTS:

  • 2 cups Rice (raw)
  • 1 cup Jaggery (Gud)
  • 1 tea spoon Cardamom Powder (Elaichi Powder)
  • 1/4 cup water
  • 5-6 tea spoon Milk
  • 1-2 tea spoon Ghee

PREPARATION:

Soak rice for 1 or 2 hours. Drain it from water.

Do not dry it completely, it should be damp. Grind it into powder and should be neither coarse nor fine.

Add jaggery and water in the heavy bottomed vessel. Allow them to boil.

Add cardamom powder and allow the syrup should be thicker which is in one string consistency.

Remove it from the stove. After few minutes add rice flour slowly and stir well until you get soft dough. It should be in the consistency of chapatthi dough. Stir continuously while adding flour. Don’t add flour at a time.

While mixing rice flour, if you wish you can add ghee for good taste.

Heat oil for deep fry. Take a plastic paper or aluminium foil or banana leaf and apply oil on it.

Take small lemon sized dough and keep it on the greased foil. Dip your fingers in the oil and flatten the dough.

Take the flatten dough out from the foil and drop gently into the heated oil. Fry both the sides until it should be brown.

Remove adhirasam from the oil and squeeze the excess oil by pressing flat bottomed bowl on the adhirasam.

SERVING:
  • Adirasam is a sweet delicacy and can be cooked for any festivity.. 🙂
