Cheesy Spinach Pasta

Since long I had this craving for pasta.. so when peeked into my fridge if I had something to make this white sauce pasta.. Found a bunch of spinach some mozzarella cheese and hence came this recipe.. 

Cheesy Spinach Pasta

Preparation Time:- 5 mins | Cooking Time:- 15 mins | Serves:- 2 people

INGREDIENTS:

  • 2 cups Pasta
  • 2 table spoon cornflour
  • 1 table spoon Butter
  • 4-5 cloves Garlic grated (Optional)
  • 2 cups Milk
  • Salt to taste
  • 3 table spoon grated Cheese
  • 1 tea spoon Dried Basil
  • 1 tea spoon Oregano
  • 1 tea spoon Pepper Powder (Kali Mirch)
  • 1 tea spoon Italian seasoning
  • 1 cup washed and finely chopped spinach (palak)
  • 1 tea spoon Olive oil

PREPARATION:

Boil the pasta as per the instructions provided on the packet (Generally boil along with some salt and oil) . Drain and keep aside.

Take butter in a pan and add the grated garlic and saute for a minute.

Once its done add the cornflour saute for a second let it not turn brown.

Add milk and stir it continuously to avoid lumps.

Once the mixture starts thickening add oregano, basil, salt, pepper powder and seasoning.

Add the grated cheese and and bring to boil. The sauce will become a bit thick.

Add the chopped spinach and pasta to the sauce. Cook for another 2 minutes.

SERVING:

  • Serve hot with some grated cheese.

Vegetable Pasta in white sauce

I always used to make pasta in red sauce.. Started making it like any Punjabi curry but eventually got the correct red sauce pasta… Everybody used to tell me that try the white sauce pasta since it is much more simpler than the red sauce one.. So one fine evening, tried the first white sauce pasta in my kitchen..

Preparation Time:- 10 mins | Cooking Time:- 15 mins | Serves:- 2 people

INGREDIENTS:

  • 2 cups Pasta
  • 2 tea spoon cornflour
  • 1 table spoon Butter
  • 4-5 cloves Garlic grated
  • 2 cups Milk
  • Salt to taste
  • 3 table spoon grated Cheese
  • 1 tea spoon Dried Basil
  • 1 tea spoon Oregano
  • 1/2 tea spoon Chilli Flakes
  • 1 tea spoon Pepper Powder (Kali Mirch)
  • 1 Medium Onion finely chopped
  • 1/2 Capsicum deseeded and chopped finely
  • 1 small carrot chopped finely
  • 2 table spoon Corn
  • 1 tea spoon Olive oil

PREPARATION:

For the sauce:

Boil the pasta as per the instructions provided on the packet. Drain and keep aside.

Take butter in a pan and add the grated garlic and saute for a minute.

Once its done add the cornflour saute for a second let it not turn brown.

Once the mixture starts thickening add oregano, basil, salt, pepper powder and red chilli flakes.

Add the grated cheese and keep aside.

For the vegetables:

Boil vegetables  together with little salt. Do not over boil, the vegetables need to be crunchy. (You can add any vegetables of your choice)

Heat the oil and add onions. Stir fry for about 2 mins, till the onions become translucent.

Add the boiled vegetables to the onions and stir fry for about 2 minutes.

For the Pasta:

Heat the pasta sauce made earlier and add the vegetables to it. Also add the boiled pasta to the sauce.

Fold the pasta and vegetables properly in the sauce.

SERVING:

  • Serve hot with some grated cheese.

Pasta Vegetable Soup

My husband is not feeling well, and due to his soar throat is not able to eat much.. So I decided to prepare some soup for him… After spending some time on the internet looking for a good recipe, I could not stick to one… So just mixed up all the veggies I had in my refrigerator and some shell pasta.. and cooked them with a few herbs… This is what I did…

Soup

Preparation Time:- 10 mins |  Cooking Time:– 1/2 hr |  Serves:- 2 bowls of soup

INGREDIENTS:

  • 1 handful of Pasta (I used Shell Pasta, though any can be used)
  • 1 tea spoon Olive oil
  • 4 cloves of Garlic grated (Lehsun)
  • 1/2 inch of Ginger grated (Adrak)
  • 1 medium Onion finely chopped length wise (Pyaz)
  • 1 small Tomato finely chopped (Tamatar)
  • 1/2 cup of Cauliflower Florets (Phool Gobhi)
  • 1/2 cup Spinach finely chopped (Palak)
  • 2 button Mushrooms finely diced
  • Salt to taste
  • 2 tea spoon Pepper Powder
  • 1 tea spoon Dried Basil leaves
  • 1 tea spoon Oregano
  • 1 table spoon Soya Sauce
  • 2 Soup Bowls of water
  • 1 pinch of Cornflour

PREPARATION:

Boil the pasta as per instructions on the packet and keep it aside.

In a pan, heat the oil and saute the ginger, garlic and onions for around 2 minutes.

Add in all the chopped veggies, tomatoes, cauliflower, mushrooms and spinach. (Any other vegetable like carrot, beans, broccoli.. can also be used…) Mix well and add the 2 soup bowl full of water.

Bring his water to boil and now add the salt, pepper, basil and oregano. Add the boiled pasta.

Mix the cornflour in spoonful of water and mix it in the soup. This will add some thickness to the soup it will not be real watery.

Let the soup cook for around 25 mins, till the veggies become soft.

Now add the soya sauce and mix well.

SERVING:
  • Serve hot.. You can add a hint of vinegar to get that tangy taste.
